Chocolate banana quinoa muffins

This protein and fiber packed breakfast/snack will have you feeling guilt free when you need to grab and go this season!!

What you’ll need:

1/2 cup all purpose flour (or your fav substitute)

1/4 cup cocoa powder

1/3 cup brown sugar (you could add more for a sweeter muffin; I did half the amount)

2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1 cup cooked quinoa

1 cup mashed bananas (about 2 large)

2 large eggs

Add ins: chocolate chips, chia seeds, flax seeds, cinnamon..!

Process:

Preheat oven to 350. 

Lightly grease muffin tin/use non stick muffin tin. 

Whisk together the flour, cocoa powder, brown sugar, baking soda, baking powder, and salt. Stir in the quinoa and your add ins. 

In a separate bowl, mash the bananas and mix together with whisked eggs. Combine with the flour and quinoa mix. 


Fill muffin tin compartments about halfway. Place in the oven for approximately 20 minutes. Check they’re cooked through. 


I tripled the recipe when I made them and it worked very well! Got around 30+ muffins to freeze and last us a while.
