Quinoa muffins and quinoa bread
These are packed full of protein and nutritious goodness! My littles aren’t keen on quinoa as a side dish so I got creative and adapted some online recipes to come up with these gems.
What you’ll need:
1 cup cooked quinoa
1 cup whole wheat flour
3 tbsp brown sugar
1 egg
2 ripe mashed bananas
1/2 cup almond milk (sub skim.. preferred milk)
1 tsp vanilla extract
2 tbsp flax or chia
1 tsp baking powder
1/2 tsp salt
Process:
Preheat oven to 350 degrees
Mash bananas, add egg, vanilla, and milk; stir until combined.
Add the remaining ingredients; combine
Pour into muffin tins for muffins, or a bread tin for bread.
For muffins bake at 350 for approx 25-30 mins. For bread 350 for 50-60 mins.
I added a fruit spread to serve as they can taste as healthy as they are otherwise! Add ins would be: cinnamon, chocolate chips, frozen blueberries…
Completely cool and freeze for batch baking.
