Greek yogurt, blueberries, and oats muffins

Another great muffin recipe! Eat warm or freeze for easy grab breakfasts/snacks. Packed with protein these muffins are fast becoming a favorite!

What you’ll need:

1 cup plain greek yogurt

1/4 cup milk

1 large egg

1 teaspoon vanilla

1/3 cup honey

1 cup oats (I used the quick cook kind bc it’s what we use to make oatmeal - any rolled oats will work)

3/4 cup flour

1 teaspoon baking powder

1/2 teaspoon baking soda

Cinnamon (as you like)

1/4 teaspoon salt

1 cup blueberries (I used frozen blueberries and they came out soooo yum!)

4 tablespoons melted butter (or sub)

2 tablespoons flaxseed (you can add more just reduce flour slightly as you inc flaxseed)

What to do:

-Preheat oven to 375. Prep muffin tin by greasing with non stick spray, or use liners.
-In a medium bowl, whisk together yogurt, milk, egg, vanilla and honey.
-In a large bowl, combine oats, flour, baking powder, baking soda, cinnamon and salt.
-Add blueberries and toss to combine.
-Add the melted butter to the yogurt mixture, then add all to the dry mixture.
-Stir until combined.
-Divide into your muffin tin and bake for 17 minutes. Check cooked through.

Enjoy warm or let cool and freeze!
