Prune oatmeal cakes

Another great snack or breakfast for any age; from BLW to toddler rushing out to school to big kid snacking every 5 minutes! Not to mention on the go food for us! 

What you’ll need:

1 1/2 cups pitted prunes 

2/3 cup rolled oats 

1 1/2 cups all purpose flour 

1 cup light brown sugar

1 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon 

1/2 cup avocado oil (use your fav oil or substitute just be sure to check quantities)

2 eggs 

1 tsp vanilla essence 

Process:

Preheat oven to 400F. Grease your muffin tin or lay out muffin cups ready. I got 23 out of this recipe so plan accordingly. 

Boil 1 cup of water in a small saucepan 

Dice your pitted prunes (this is tedious but they’re worth it!). Remove water from heat and stir in the prunes and oats. Let stand for 15-20 mins. 

In a large bowl, mix together the flour, sugar, baking soda, salt and cinnamon. 

Once cooled, stir the oil, lightly beaten eggs and vanilla essence into the saucepan mixture. 

Make a well in the dry ingredients (as pictured) and pour in the mixture. Stir to combine. 

Spoon your mix into your muffin cups and bake at 400F for 25 minutes. Check they’re cooked through (insert knife into the center; if it comes out clean they’re good to go!). Eat them, or freeze them if you can resist!
