Peanut butter flapjacks

My charge (and his friends... and my nanny friends) LOVES these! They are so easy to make and full of protein, fiber and peanut butter deliciousness!

What you'll need:

  • 1 cup peanut butter (or substitute almond butter/sunflower butter depending on your needs)

  • 1 cup honey

  • 3 cups oats

  • 3 tbsp. flaxseed (for added fiber - optional)

  • Optional add ins- raisins, chopped nuts, cranberries (in the photo they have cranberries and raisins)

  • large bowl

Prep:

  • Melt the peanut butter and honey together in a bowl (in the microwave or on the stove)

  • Take them off the heat and add oats and preferred additional dry ingredients

  • Mix together until combined

  • Form little bite size balls or transfer to a flat storage container to slice like flapjacks, and place in the fridge to set. If you're making them into bite-sized balls place them on a plate to set and then transfer to a ziplock bag for easy storage.

  • Cover them and let them set overnight

And that's all there is to it! Yum!
