Banana pancakes

Ok. This one may be too easy and absolutely delicious. My charge and I love these pancakes and they take about 5 minutes to make!

What you'll need for approx. 5 pancakes (adjust to suit your needs):

  • 2 ripe bananas

  • 4 eggs

  • Optional additions: Flaxseed, cinnamon, brown sugar, vanilla essence.. I personally love them with a couple tsps. of vanilla essence, and my charge loves a sprinkle of cinnamon.

Prep:

  • Mash the bananas; try to get rid of as many lumps as possible

  • Add the eggs and mix (if you're lucky enough to have a blender or electric whisk that'll make it even easier to get the mix as smooth as possible)

  • Warm some oil (whatever you normally use is fine) in a small frying pan

  • Add a scoop of the mix to the pan and fry on a medium heat. Flip as you would a normal pancake and serve when nice and browned,

These have a tendency to fall apart but don't be discouraged! They're still yummy even if they come out a little broken! If anyone manages to add a magic ingredient that makes them a little better formed, feel free to comment and enlighten us!
