Broccoli Cheddar bites

I'm a big fan of using the cupcake tin to create easy grab-able snacks and dinner additions that just make mealtimes so much easier! With these Broccoli Cheddar bites you can guarantee your charges get a healthy and delicious snack/meal in perfectly prepared portions.

What you'll need:

  • Your trusty cupcake tin

  • 2 cups chopped broccoli (I usually boil the broccoli first but whatever you think will go down better with your charges!)

  • 2 eggs

  • 2 cup shredded cheddar (switch up the cheese and let us know how it tastes!)

  • 0.5 cup Panko breadcrumbs (you can use your preferred breadcrumbs or even jazz it up with some crumbled fried onions)

Prep:

  • Preheat the oven to 375. Spray your tin with non-stick spray unless your tin is already non-stick.

  • Combine the broccoli, eggs and cheese in a medium bowl. Mix.

  • Gradually add the panko breadcrumbs to the mix; stopping when the mixture is nice and firm.

  • Separate the mix into bite size balls and place into the cupcake tin. I usually get around 8-12.

  • Cook for 30 mins

They can be eaten right away or frozen for another day! I usually separate them into portions of 3-4 bites that'll go into ziplock bags so that on a Monday morning I can pull out enough bags for the week! Easy.
