Walnut prune oatmeal bites

Need a fast and easy breakfast or snack that you can make in advance and have ready to go in a pinch? Need a creative way to get some extra fiber into your charge? Looking for a yummy treat that isn't filled with sugar and preservatives? Look no further! These healthy and delicious bites can be adapted to suit your needs, made in advance, and are great for lunch boxes and snack bags!

What you'll need:

  • Cupcake tin

  • Non stick cooking spray

  • 2 cups rolled oats

  • 1 tsp. baking powder

  • 1 tbsp. Cinnamon (adjust to suit your taste)

  • 1 cup whole milk (adjust to your needs; can use almond milk, soy etc..)

  • 1 egg

  • 0.5 cup brown sugar

  • 1 tbsp. flaxseed

  • 1 bag of pitted prunes

  • 0.5 cup chopped walnuts (adjust to suit your taste/allergies)

Prep:

  • Preheat the oven to 375 and spray your cupcake tin with cooking spray (unless its already non-stick)

  • Start by dicing the prunes into small pieces (this'll make mashing them easier later) and put them in a medium pan. Cover with water and put on the stove to boil. Keep them on the heat until you start to see them getting softer. It usually takes around 5-8 minutes depending on how many you have. Start mashing them so that its more like a thick prune sauce. You can take them off the heat now and let them cool.

  • Whilst the prunes are boiling, add all of the dry ingredients to a medium bowl. Mix. Add the egg, milk, and somewhat cooled prunes (make sure they're cool enough to touch as you'll be using your hands next).

  • Mix all the ingredients together to form a dough that you'll now separate into balls.

  • Make bite-size/mini cupcake sized balls and place them in your cupcake tin spaces. Mine usually makes around 16 but size them however your prefer.

  • Bake for 20-25 minutes. Let them cool to harden slightly.

  • You can keep them in the fridge for breakfast and snacks or freeze them for a later date!
